  9. 1-2 Tbsp Sweet Chilli Sauce
  10. 1-2 good handfuls Cashew Nuts, lightly toasted
  11. Little Gem or Butter Lettuce Leaves, washed and dried, to serve
  12. Lime Wedges, to serve
  13. Coriander leaves, torn, to serve
  14. 1-2 Tblsp any neutral flavour cooking oil

Instructions to make to make Oriental Chicken & Cashew Nut Lettuce Cups

  1. Mix the minced chicken with the garlic, ginger and soy sauce, set aside whilst you prep the rest of your ingredients.
  2. Lightly toast the cashew nuts on a fry frying pan until just starting to brown slightly, remove to a cold plate to cool until you are ready to use them.
  3. Heat 1-2 Tblsp cooking oil in a medium to large wok (or deep sided frying pan) until it is just smoking
  4. Add marinated chicken, stir fry, breaking it into fine pieces, until it is starting to brown. This will take about 3-5 minutes
  5. Turn down the heat a little on the wok so as not to burn things and add the red pepper and spring onions. Stir fry for a couple of minutes, until just starting to soften
  6. Add satay and sweet chilli sauce to the pan and give everything a thorough mix and let it bubble for a minute or so. Add a splash of water if it seems a little dry.
  7. Mix in the drained, softened chopped rice noodles and the toasted cashew nuts, and heat through. Have a little taste and adjust the sauce if you feel it needs extra soy, satay, sweet chilli sauce or a splash of water
  8. Arrange lettuce leaves onto your serving plates and spoon on the chicken and cashew mix. Scatter over some coriander leaves and pop a few lime wedges on the side
  9. Enjoy!
